Prepare the zucchini

Grate the zucchini, wrap it in a towel and squeeze gently until no water drips while the zucchini remains moist.

Protein-powder substitution

Replace the protein powder with an additional 1/4 cup hemp hearts or 1/4 cup collagen. Add more honey if needed.

Method

  1. Preheat the oven to 350°F and line a pan with parchment paper.
  2. Mix the zucchini, nut butter, coconut oil, honey or maple syrup, vanilla and salt.
  3. Stir in the oats, almond flour, cocoa powder, protein powder and hemp hearts.
  4. Fold in the chocolate chips. Add coconut milk if the dough feels too dry.
  5. Scoop into one-tablespoon cookies on the lined tray.
  6. Bake for 10–12 minutes, until just golden.
  7. Cool on the pan for two minutes before transferring to a cooling rack.
